“What exactly is editing?
And how is it different from proofreading?”

I get those questions all the time, so here's a simple explanation:

Proofreading is checking written work for errors in things like spelling, grammar, and punctuation.

Editing includes proofreading, but goes a step further. Editing also includes revising or polishing portions of the written copy to strengthen the tone and clarity, improving overall readability. Simply put, all the information is there, it just needs a little reworking so it sounds better.
